加加面是滇藏地区的特色小吃，每次煮一大碗，装在小碗里，每个小碗也就一口，由服务员分次加，吃完一口加一点，一口一碗，和着肉末烧的，极鲜美，直到吃到你投降。 吃加加面时比较随意而有趣,如果不吃加面的，就用大碗，直截了当、大快朵颐;如果时间充足、追求乐趣的，就用小碗吃加面，别有一番滋味。每吃一碗，都在碗旁边放一个石头，如果真的吃不下去了，就用筷子在碗上摆放出“X”的形状表示不再加面。吃加加面，吃的是一种休闲和娱乐，至于繁琐的服务，是表示对远方客人的欢迎。

加加面来源：公元1260年(藏历第四饶迥铁猴年)， 元世祖忽必烈册封八思巴为国师，后指定乌思藏十三万户为八思巴的供养地，并在沿途设立驿站保证八思巴返藏时道路安全畅通，其中朵甘思地区(康区)设有9个驿站。
公元1265年(藏历第四饶迥木牛年)，八思巴奉旨返藏。为了恭迎国师八思巴，朵甘思地区一帮僧众精心准备贡品，反复调试口味。八思巴途经朵甘思地区时，僧众顶礼膜拜，并以小碗面的方式向八思巴敬奉了盐井“加加面”，八思巴赞不绝口，非常喜欢，一连吃了好几碗。从此，盐井“加加面”以小碗“加加”的方式流传了下来。
民间小故事：传说，一个纳西盐井的云南后裔，娶了一个四川巴塘的女子，婚后在盐井街上开了一个面铺。他们为了迎合茶马古道上不同饮食习惯的人们，以盐井盐、花椒、小灶酒等腌制云南火腿肉的方式制成了琵琶肉，再吸收四川巴塘手工面制作技艺，研制出盐井手工面，古道客人在单调的文化娱乐活动中又开创了小碗面加加的方式促乐、开胃、游戏，从而形成了盐井加加面。
盐井加加面一碗面一般加三口的量。按照过去的说法，如果只加一口面，则小气，损福德。每年年三十，盐井人都会祭祀祖宗，人们认为，由于阴间的人以香味捕食，无需量多，因而当地人把年饭都以小分量(一口量)装带到祖坟祭祀。所以祭祀的祭品以一口为量，而在人间则以多为富。
盐井加加面之前叫“盐井长面”，历史悠久，但均为家庭作坊式，真正走进市场是从盐井街上队的面馆开始的。
二十世纪七十年代，国家开始进行经济体制改革，准许集体经营副业。盐井街利用当地优势，开始经营长面馆(萨孔缝纫和木工三个特色产业。“萨孔” 就是盐井第-个真正意义上的加加面馆。
盐井人吃加加面叫“面揪(呜)”，译意为加面吃。后嘎果队的阿普丛经营的面馆注册了商标，从那时开始形成了统一的称呼——盐井加加面。
滇藏线上流传着这样的故事：
曾经有一个从滇藏线骑行进藏的湖南小伙骑行了一百多公里，只吃了一个饼，就是为了来打破佳加面的上一个记录。
后来不负众望，竟然一口气吃了147碗！此后一年都没有人打破他的记录，于是店主以他如今的记录为标准，广发英雄帖，只要有人超越147碗的记录，就给予承诺的奖励——500元。
